Delicious No Sugar Gajar Ka Halwa Recipe For Diabetics
5-10 medium-sized carrots, 3-4 cups of full-fat milk, 3-4 tablespoons of jaggery or chopped dates, one-fourth cup of mixed nuts, and half a teaspoon of cardamom powder.
Start by washing and peeling the carrots. Grate the carrots into thin ribbons for a perfect texture.
Heat desi ghee in a kadhai and add grated carrots to it. Cook it over medium flame for 5-10 minutes.
Now, pour the full-fat milk into the carrots and stir it well. Cook it for about 10 minutes until milk is absorbed.
To add natural sweetness to the halwa, add jaggery powder or date paste. Stir it well until it has melted.
Cook the halwa until it starts to thicken. Add cardamom and cinnamon powder to enhance the flavour.
When halwa is almost cooked, add the chopped dry fruits with ghee. Mix it well and serve it warm.
