Make the Kofta Dough: In a bowl, combine mashed potatoes, grated paneer, cornflour, spices, and chopped coriander. Mix well and shape into small balls.
Fry the Koftas: Heat oil or ghee in a pan and fry the koftas until golden brown. Remove and set them aside.
Prepare the Gravy Base: Heat oil in a pan. Add cumin seeds and sauté until they splutter. Add chopped onions and cook until golden brown.
Cook the Tomatoes: Add ginger-garlic paste, pureed tomatoes, red chili powder, turmeric, garam masala, and salt. Cook for 3-4 minutes until oil separates.
Add Cream to the Gravy: Stir in fresh cream and cook for another 2 minutes.
Combine Koftas and Gravy: Gently add the fried koftas into the gravy and let them soak for about 2 minutes.
Garnish and Serve: Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
