1 cup moong dal, 1 cup chopped spinach, 1 large onion, 1 tbsp garlic ginger, 2 green chillies, 1 handful chopped coriander leaves, ½ tsp cumin powder, ½ tsp coriander powder, 1 tsp red chili powder, ½ cup besan, water as needed, 1 tsp baking soda, ¼ tsp turmeric powder, ghee for cooking.

To begin with this easy chilla recipe, rinse the moong dal thoroughly under running water until the water runs clear.

Soak the dals in enough water for about 2–3 hours. This helps with easy grinding and also improves the texture of the chilies.

After draining the excess water, rinse again and spread the dal to remove the moisture. Meanwhile, wash and chop the spinach, garlic paste, onion, green chilies, and coriander leaves.

In a blender, grind the dals along with chopped spinach and green chilies, along with besan and some water, to make a semi-thick paste. Add spices to this blend along with baking soda. Then allow this blend to ferment for an hour.

Pour a ladleful of batter, brush some ghee on the edges, and cook by flipping sides and enjoying.
